Butter Lettuce & Garden Herb Salad
I know it doesn’t look like much but this salad is truly amazing and dressed to impress. It’s my go-to special occasion salad and it never fails me. It is so easy to make and it’s one of the birthday boy’s favorites.
I’ll admit that my kid did not have even one bite BUT the next day he finally tried lettuce for the first time and immediately declared that he liked it and ate like a rabbit. I think this awesome salad is in his future. Now for the recipe…
Butter Lettuce & Garden Herb Salad Recipe
Prep Time: 8 mins
Ingredients:
1 bag butter lettuce (aka Boston bibb)
handful of flat leaf parsley leaves
handful of tarragon leaves
leaves of 2 or 3 sprigs of dill
teaspoon of fresh oregano leaves
6 to 8 basil leaves torn
1 cucumber, thinly sliced
6 tablespoons olive oil
juice of one lemon
1 teaspoon dijon mustard
salt & pepper to taste
In a large bowl toss together fresh herbs and cucumber. Meanwhile, whisk lemon into olive oil. Add mustard and salt and pepper to taste and continue to whisk until emulsified. Drizzle over salad and toss to coat. Serves 4.
