Sweet Potato & Lentil Stew and Naptime Chef Cookbook Giveaway
I got my copy of The Naptime Chef Cookbook and it is filled with mouthwatering recipes. Seriously, I want to make everything! What’s so great about this cookbook is that you prep during nap and cook with the kids later. But we have to start somewhere so the kids and I chose the sweet potato and lentil stew because it’s cold outside. It’s just me and my little guy for the afternoon, and this recipe was perfect for us. I prepped during naptime and once lincoln woke up and was past the groggy stage he was eager to get to work in the kitchen. Normally I take one look at a recipe and end up changing a ton of ingredients, but I decided to stick with this one.
Boy am I glad I did, this stew is perfect as is. My husband could not stop talking about how delicious it is and Lincoln was spooning it in faster then he could eat. What a way to start with this new cookbook, the only thing is I want to keep making this stew every night! Sweet Potato & Lentil Stew
Naptime prep – 15 minutes
cook time – 50 minutes
2 tablespoon olive oil
1 medium yellow onion, finely chopped
2 tablespoon fresh ginger, grated
1 garlic clove, minced
2 teaspoon curry powder
1 teaspoon kosher salt
32 oz low sodium chicken stock
2 large sweet potatoes, cut into 1 inch cubes
1 14oz can chopped tomatoes with juices
1 cup brown lentils
fresh ground pepper to taste
1. In a heavy stockpot or dutch oven, heat the olive oil over medium heat. Add the chopped onions and gently sauté until tender, about 5 minutes.
2. Add the ginger, garlic, curry powder, and salt to the pan and stir until the mixture is fragrant, about 2 minutes.
3. Carefully pour in the chicken stock and ass the potatoes, tomatoes, and lentils. Increase the heat to medium-high and bring the stew to a boil. Allow to bowl for 1 minute, then reduce the heat to medium-low and simmer everything, stirring occasionally for about 40 minutes, or until the sweet potatoes are tender enough to pierce with a fork. Before serving taste the soup and add an extra pinch of salt and pepper in necessary. Serve hot!

I didn’t ass the potatoes, I only added them – but, it still turned out delicious!
