This post came at just the right time for me! I have a fairly picky almost-21-month-old. I am a vegetarian. My husband and son are not. I do not like to cook everyday. I have been making different meals in individual portions to freeze (mini chicken pot pies, meatballs in sauce) to make it quick and easy to get a somewhat healthy meal together for my son. I have been searching high and low for other meat/vegetable recipes that i can portion and freeze like this and have not found a whole lot. The corn dog muffins will be a hit, I am sure. Any other ideas in this vein?
