Swell Supper: Souper Cozy Dinner
Hi, Macki here interrupting Home Baked Holidays to bring you another Swell Supper. In Los Angeles we don’t get many cold days, but this weekend it’s overcast and chilly and feeling like the holidays. It reminds me of being home in Oregon and having a big bowl of soup to warm me up. For this week’s Swell Supper my family needs some warming up too so we’ll be making Roasted Butternut Squash & Chickpea Soup with Zucchini Fritters and Baked Apple Donuts for dessert. For those celebrating Hanukkah this makes for a wonderful holiday meal. This is also a great vegetarian meal idea!
Start this cozy dinner by prepping the butternut squash & chickpea soup according to the recipe. While the broth cools and the butternut squash bakes prepare the ingredients for the zucchini fritters. By the time you get the fritters on a baking sheet the squash should be ready to come out. Turn your oven down to 400 degrees and pop the fritters in the oven. (Note: if you want a traditional Hanukkah fritter cover the bottom of a pan with oil, wait until it is almost smoking and scoop spoonfuls of batter in. When one side is brown, flip and brown the other side. Remove from pan and place on a paper towel.) Now blend your soup and return it to the pot to simmer according to the recipe.
While everything cooks prepare the baked apple donut recipe and call everyone to dinner (we used a mini donut pan and cooked them for 5 minutes). After your meal is finished pop the donuts in the oven and have your family help clear the table – if they want a donut :). By the time the table is clear and everyone’s mouths are watering the donuts will be ready! Sprinkle them with powdered sugar and eat. Now doesn’t that sound swell?
PS: I included two photo’s of my son because he loved the fritters and actually helped (at 14 months!) put the powdered sugar on the donuts. What a wonderful and warm family dinner.

The zucchini fritters sound interesting, I think they'd be a hit here with our 6yr old.
Yum. I made this entire supper and invited my neighbor over. I love the chickpeas in the soup. I made my apple donuts in a muffin pan and they turned out great! Keep the veggie meals coming!
