In honor of breakfast week we’re doing breakfast for dinner. It was such a big hit last time in our house that we decided to go all out and have a pajama party too! Not only are the kids excited to wear their PJ’s, it makes the bedtime routine quicker by getting this step out of the way. Hmm, I may be on to something here, PJ’s at dinner every night! This time we’re serving up one of my favorites German Apple Pancake, Maple Glazed Maple Turkey Bacon, and a Very Berry Smoothie.

Grilled Maple Bacon

Get everyone dressed in pajamas and head to the kitchen. Preheat the oven to 400 degrees. Mix the batter for the German apple pancake and let it rest. Meanwhile prepare the apples. Move on to the maple glazed turkey bacon. Instead of grilling we are going to bake. Place a cooling rack over a cookie sheet and arrange the bacon on the rack without overlapping. Put it in the oven and cook for 10 minutes. While the turkey bacon cooks heat a 9 inch cast iron skillet and cook the apples for the pancake according to the recipe. When the timer for the bacon goes off, brush each piece with maple syrup and put it back in the oven for another 3 minutes or until crisp. Back to the pancake. Add batter to the softened apples in the skillet. Remove the turkey bacon from the oven and place the skillet in the oven and set the timer for 16 minutes. Transfer the turkey bacon to a paper towel lined plate and cover with aluminum foil to keep warm.

Get out the blender and the ingredients for the very berry smoothie and blend until smooth. The German apple pancake should be done, remove and place entire skillet on a trivet in the center of the table, sprinkle with powdered sugar, pour the smoothies, and serve up the turkey bacon. Time for a pajama party dinner! Now doesn’t that sound swell?
