Swell Supper: Marinated Veggies & Spaghetti Pie, Oh My!

We are a spaghetti loving family, but sometime you just need to mix things up and spaghetti pie is just the way to do it. And since we are having an Italian night, why not cook up some marinated roasted veggies to go along side? For dessert I’m satisfying my date cake craving and the kids couldn’t be more pleased!

Begin this swell supper by making the date cake and placing in the oven. While the cake is baking prep the veggies and place on a rimmed baking sheet. As soon as the cake is finished remove from the oven and turn the temperature up to 400 degrees. When the oven is preheated place the veggies in the oven and start on the spaghetti pie.

The spaghetti pie should be prepped just in time for the veggies to come out.  Lower the temperature to 375 and put the spaghetti pie in the oven. Finish the prep for the veggies and let sit out to cool. Now prepare the glaze for the cake. The spaghetti pie should ready, remove from oven and serve. Now doesn’t that sound swell?
