My kids get excited when we mix things up around here; we’ve done breakfast for dinner, lunch for breakfast and “dinner” for whatever the kids feel like at any given moment of the day and that’s fine by me as long as it’s healthy . So when they ask for sandwiches I mix it up too and this week for my swell supper we’re making Chinese Chicken Salad Sandwiches, Baked Kale Chips, Quick Homemade Applesauce, and Chickpea Chocolate Chip Cookies (trust me they are delicious!).

Begin with the applesauce.  The recipe does say it tastes amazing warm, but we are serving it chilled on this hot summer night. You will need to get the applesauce cooking about 3 hours before you plan to eat to give it time to cool.

Next make the chickpea chocolate chip cookies. Try to resist the urge to eat them all while cooking the rest of your meal. Meanwhile prep the kale for the oven and when the cookies are finished turn the temperature down to 325 degrees F. Place the kale chips in the oven for 15-20 minutes.

While the chips are baking assemble the chinese chicken salad sandwiches. Place the sandwiches on a serving tray, take the kale chips out of the oven and put them in a bowl, take out the chilled applesauce from the fridge and dinner is served! Don’t forget your irresistible cookies for dessert.  Now doesn’t that sound swell?
