Swell Supper: Hearty, Meatless Meal
A meatless meal can be hearty and delicious and it doesn’t have to be tofu, pasta or three bean chili. In our house we try to find healthy, hearty alternatives to meat and one of the biggest hits with the kids is Stromboli. For this weeks swell supper we are making Broccoli and Cheese Stromboli, Tuscan White Beans and Gooey Marshmallow Brownies for dessert. Yum!
The first step in making this meal is to get your tuscan white beans cooking. They can take up to 2 hours, so plan accordingly. Preheat the oven and get started on the gooey marshmallow brownies. You can make you own from scratch or use a box of Ghirardelli. Place the brownies in the oven for the recommended time. When the beans have been simmering for about 30 minutes, start on the Stromboli. Assemble the filling and role up. The brownies should be done so remove from the oven and sprinkle with marshmallows and chocolate chips and place back in the oven for 2 to 5 minutes.
Once the brownies are out of the oven and set aside to cool, turn the temperature up to 400 degrees. Place the Stromboli in the oven and cook for 20 to 25 minutes. Check on the beans, add water if needed or drain if they are soft. Add olive oil and season to taste. Remove the Stromboli and let it sit for 5 minutes. Serve the beans, then add a slice of the Stromboli and serve the gooey marshmallow brownies for dessert. Now doesn’t that sound swell?
