Happy New Year from Macki! I’m cooking up another Swell Supper with a confession added in. I’ve been at my parents’ house all week and my mom was more than prepared for her children and grandchildren and ready to satiate the sweet tooth in all of us. When I walked in the door I was hit with fudge, pecan fudge, brownies, chocolate krinkles, frosted sugar cookies, frosted almond cookies, pecan pie, homemade caramel corn, apricot filled Danish dough, chocolate blueberries, strawberries, and raspberries, every kind of M & M’s, stocking candy galore, giant home made cinnamon rolls and red rope licorice. Confession: I ate so much the elastic waste band on my leggings is being put to the test.  By the end of the week I’m feeling sluggish and need a healthy dinner. I searched through Rebecca’s recipes and found the perfect meal to make us all feel better – fresh and healthy and really quick! Tonight we are serving up Pan Seared Salmon, Make-Ahead Asparagus, and Quick Quinoa and Corn Saute (no dessert!)

To start this healthy meal, prep your salmon according to the recipe. Meanwhile, prepare the asparagus and place it in the oven. While the asparagus is cooking start the quinoa, I used one packet of vegetable broth with the two cups of water to give it a richer flavor. The asparagus must be getting close, time to remove it from the oven and get back to the salmon. Cook the salmon according to the recipe.

Meanwhile continue with the quinoa recipe, instead of fresh corn you can cut cooking time by using half a bag of frozen corn and sauté it in olive oil and skip the butter to make it that much healthier. Time to call your family in and start the New Year off with this quick and healthy dinner!  Now doesn’t that sound swell?

I love this photo, three generations of cooks. It all started with my mom, we cooked with her for as long as I can remember. She taught me everything I know about cooking and I still call her almost every day with questions. I love passing this on to my kids.
