Hi, it’s Macki with another Swell Supper, my favorite one yet! Tonight we are serving up Potato and Corn Tacos with Quick Spanish Rice and Yummy Black Beans and for an after dinner treat serve up some Mexican Wedding Cake Cookies (or Snowball Cookies).  I grew up eating potato tacos in Oregon because there are more than a couple of vegetarians in the family, but they were more like breakfast potatoes in a tortilla. I loved them as a kid, but these are incredible! I cannot wait to visit my parents next week and make this new and greatly improved version. We are going to have a Fiesta! Start with the cookies, since they take the longest. Prepare the dough according to the recipe and place it in the fridge to cool. While the dough is cooling, chop the vegetables for the tacos, rice, and beans and set aside. Time to finish making the cookies.

Boil the potatoes according to the recipe. Meanwhile, start the yummy black beans.  When the beans are simmering, cook the quick Spanish rice. Finish the potatoes and corn recipe (I used ¾ cup of frozen roasted corn). For the tortillas we prefer soft corn which we heat up in a pan.

My daughter had so much fun building her taco, but she didn’t get much further than two bites. They were a wee bit spicy for her but we loved ‘em. Next time I’ll remove some of the potatoes and corn for her before I mix in the seasoning.  At least she wasn’t too full for Mexican wedding cake cookies for dessert.  Now doesn’t that sound swell?

    These look great; I can't wait to try them! Have you tried vegetarian chorizo? I love to fry it up with cubes of cooked potatoes and use that in my veggie tacos.
