I’m a food craver.  And when I crave something there’s no stopping me until I get it. Before having kids I wondered what types of crazy foods and combinations I would crave during pregnancy.  Is there really a pickles and ice cream desire?  Would I try something I would normally never try? When I was pregnant with my first I waited and waited for the cravings to come, but there was nothing. Food wasn’t even a big deal to me. The same thing happened with my second pregnancy.  I never had to desperately satisfy some wild craving in the middle of the night. Then I realized that I only crave foods when I am not pregnant! There are several recipes on this site that I have been dying to make so tonight I am fulfilling my hunger for Rice Cooker Risotto, Quick Cucumber Tomato Salad, and Pistachio Tart for my sweet tooth.

Quick cucumber tomato salad.

Begin with the cucumber tomato salad and place in the refrigerator to marinate until the rest of dinner is ready. Next make the crust for the pistachio tart and refrigerate for an hour. Meanwhile get the veggies for the risotto in the oven roasting, now go back to the tart and make the filling. Take the crust out of the fridge and form and cook it according to the recipe.

Get started on the risotto with your rice cooker. My rice cooker has two options, cook and warm there is no fancy porridge so I just put it on cook and let it do it’s thing. Fill the crust with the pistachio filling and place on a serving tray. Add the roasted veggies to the risotto and serve up! Don’t forget the cucumber tomato salad in the fridge. Ahhhh, craving satisfied. Now doesn’t that sound swell?
