Swell Supper: Celebrate Back to School
My daughter started kindergarten this month. The first week was only 2 days, but this week was a full week, the real deal. She survived, we survived and I wanted to make a kid-tastic meal together to celebrate this huge milestone. For this weeks swell supper we are cooking up some Homemade Spaghetti Ohs, Oven Fries, a side of broccoli, and Marshmallow Lollipops for the sweet ending.
Start with the oven fries. Preheat the oven to 425 degrees F and prep the potatoes. Set the potatoes aside and make the meatballs for the spaghetti ohs. Once all the meatballs are formed, place the oven fries into the oven. Go back to the meatballs and brown them in a saute pan. Place them in a dutch oven according to the recipe and reduce the heat to 400 degrees F and pop in the dutch oven with the fries. Set the timer for 10 minutes.
While the food is baking it’s time for dessert pop making. That rhymed. This is our favorite part which is no surprise. Who wouldn’t love to dip and decorate a marshmallow?! When the timer goes off start the water for the pasta and get a steamer out for the broccoli. Steam the broccoli for 3 to 5 minutes. The meatballs and oven fries should be done so remove from the oven and serve. Don’t forget to scarf down a marshmallow lollipop for dessert (like you would forget!). Now doesn’t that sound swell?
