Spring is right around the corner with summer soon to follow. I know we are all itching for more sunshine and warmer, longer days so for this weeks swell supper we are bringing a bit of summer into the last days of winter. Get ready for some Hide and Seek Hamburgers, Breadless BLT with Buttermilk Dressing, Baked Sweet Potato Fries, and Blueberry Cobbler Bars for dessert.

The blueberry cobbler bars need time to cool so make them first.  The recipe calls for 2 cups of blueberries – I suggest buying extra since they are irresistible to both kids and grown-ups. Once the cobbler bars are in the oven move on to the oven baked sweet potato fries. Prep the sweet potatoes according to the recipe and when the cobbler bars are done remove them from the oven and place the sweet potatoes in. Turn the oven up to 450 degrees. The fries may need a few extras minutes since they are starting at a lower temperature.

Meanwhile cook the bacon for the breadless BLT in a pan on the stovetop. While everything is cooking prepare the buttermilk dressing and make the hide-and-seek hamburger patties and place them on a rimmed baking sheet. At this point the sweet potato fries should be ready, remove from the oven and change the setting to broil.

Put the rimmed baking sheet with the hide-and-seek patties into the oven and broil for 3-7 minutes, depending on how you like it cooked. Toast the buns and assemble the breadless BLT. Remove the burgers and place on buns with a tomato slice and plate with the breadless BLT’s and oven baked sweet potatoes fries. After dinner slice the blueberry bars and serve. Now doesn’t that sound swell?
