Skewer Grilled Asparagus
I am beyond delighted to report that my kid LOVES ASPARAGUS. I’d like to take credit for this awesome happening, but I really can’t. Ever since my husband started referring to them as green light sabers, the kid was sold. What I will take credit for is getting him extra excited about cooking asparagus on the grill.
This method is perfect for clumsy grillers (like me!). I’m the type that loses asparagus to the firey depths of the grill never to be seen again. When you’re dealing with only one bunch of asparagus, this is quite costly to a meal. Skewering makes all the difference and I like to think that the spears feel safer together on that grill. Not a one plunged to it’s death.
Skewer Grilled Asparagus Recipe
Prep Time: 10 mins Cooking Time: 10 to 15 mins
Ingredients:
1 pound asparagus, ends trimmed
olive oil for drizzling
wooden skewers, soaked in water for 10 mins
sea salt & pepper
1. Blanche trimmed asparagus in a pot of boiling water for 2 mins. Drain and dunk in cold water. Do not over cook.
2. Skewer asparagus using 2 skewers each about 1 inch from each end and drizzle both sides with olive oil.
3. Grill over medium heat for 5 to 7 minutes on each side or until tender.
4. Remove from skewers and season with salt and pepper to taste.
5. Serve hot or at room temp.
