Honey Glazed Carrots & Parsnips
As you know, this week is dedicated to recipes inspired by my America’s Test Kitchen Healthy Family Cookbook. I really do enjoy the cookbook, but I must admit that this recipe was simply inspired by it in name only. They had a recipe for honey glazed carrots, which sparked my imagination.
It apparently sparked the imagination of my kid as well who stole a carrot to use as a lightsaber in a battle with our dog. Except the dog did not have her own lightsaber and she prefers to eat carrot sticks. She was very patient at first.
I’m not sure who “won” the battle, but as you can see the tip of the lightsaber was successfully nibbled off by Obi Wan K-doggie. And the honey glazed carrots were devoured by kiddy-boy Skywalker.
Now for the recipe…
Honey Glazed Carrots & Parsnips
Prep Time: 5 mins Cooking Time: 20 to 30 mins
Ingredients:
1/2 pound carrots
1/2 pound parsnips
1 tablespoon olive oil
honey
salt & pepper
1 tablespoon fresh chopped parsley
Cut carrots and parsnips into one inch pieces on the diagonal. They should all be roughly the same size. Preheat the oven to 400 degrees. Coat the bottom of a large cast iron (or other oven proof) skillet with olive oil and warm over medium heat. Place the carrots and parsnips in a single layer on the bottom of the pan. (If they don’t all fit, you can do them in batches.) Let them cook for 5 to 7 minutes until they start to brown and blister. Drizzle honey over the top of the carrots, stir and bake in the oven for 15 minutes. Add salt and pepper to taste and garnish with parsley. Serves 4.
The recipe looks so good and I can’t believe how simple it is.
