Whole Wheat Olive Oil Biscuits

When I saw these biscuits [1]on Foodologie I just knew we had to make them. Easy, healthy and seemingly delicious. They met all the requirements.

The recipe calls for mixing it up by hand (which seemed simple enough) but my kid loves the dough hook on the Kitchen Aid mixer so we decided to give that a shot. Our dough was ready in a matter of minutes.

Granted we ate them steaming hot with butter and a little jam but they tasted pretty darn good for whole wheat biscuits made with without butter or lard. Now for the recipe…

Whole Wheat Olive Oil Biscuits

Prep Time:
10 mins  Cooking Time: 7 to 10 mins

Ingredients:
1 cup all purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup butter milk
2 tablespoons olive oil

Preheat the oven to 500. In the bowl of your electric mixer, whisk together both flours, baking powder and salt. In a measuring cup combine the olive oil and buttermilk. Use the dough hook to slowly add the butter to the flour mixture until it pulls away from the bowl. Transfer the dough to a lightly floured work surface. Pat out 1/2 inch thick and cut into rounds. (We used hearts.) Bake for 7 to 10 minutes until golden brown. Makes 6.
