Turnkey Turkey Meatballs

Turnkey Turkey Meatballs

We love cooking mini-meatballs and making them into various other meals throughout the week. With sauce or without – on pasta or as a mini-meatball sub. We even freeze some for later incarnations. My kid likes to get his hands into the mix and squish it all together. He likens it to worms!

Prep Time: 10 mins  Cooking Time: 20 mins

Ingredients:
1 pound lean ground turkey
1 to 2 tablespoon fresh chopped parsley
1 small onion very finely chopped
2 to 3 tablespoons ketchup
1 egg
1/2 cup breadcrumbs
1 to 2 garlic cloves minced
salt & pepper
1 1/2 tablespoon olive oil
1/4 cup water

In a large bowl combine turkey meat, breadcrumbs, ketchup, egg, garlic, onions and parsley. Add salt and pepper to taste. Stir together until combined and then form into small sized balls. Heat oil in a large non-stick frying pan over medium heat. Add the meatballs and cook them until they begin to lightly brown on all sides. Once they are just brown, pour in water and cover. Lower heat to simmer and cook for addition 10 to 15 minutes or until cooked through. This creates a crunchy on the outside yet very juicy inside meatball – which is pretty rare with turkey meat.

Note: Although my kid did eat 4 of these in one sitting, he asked for the “green stuff” aka parsley to be omitted the next time we make meatballs. Also, the onions in the meatballs pictured are not finely chopped enough – we recommend going quite a bit smaller for the perfect taste.
