Turkey Meatloaf

Since my kid really digs meatballs, we decided to give meatloaf a try.  This recipe is meant to be as close to meatballs as possible… making the food look and smell familiar always helps with getting the kid to taste it!  The kid loves digging in mixing up the meat (worms) with his hands. We wash his hands very very well when we are done. Since my husband is a vegetarian, we made two mini loaves so we could freeze one. You can also make one large loaf if you’re feeding the whole fam.

Prep Time: 12 mins  Cooking Time: 50 mins to 1 hour

Ingredients:
1 pound lean ground turkey
1 large shallot chopped very finely
1 egg
2/3 cup bread crumbs
2 cups tomato sauce
salt + pepper
1/4 cup water
2 tablespoons barbecue sauce
1 tablespoon dijon mustard
2 tablespoons brown sugar

Preheat oven at 350 degrees. In a large bowl mix together turkey, egg, shallot, bread crumbs, 1/2 cup tomato sauce and salt and pepper. Mold mixture with hands into one large loaf shape or two mini loaves. Place in the center of a greased 9×13 baking dish. Set aside. Meanwhile, mix together 1 1/2 cups tomato sauce, water, barbecue sauce, mustard and brown sugar. Pour sauce mixture over loaf and put in the oven. Spoon sauce over loaf periodically. Cook mini loaves for 1 hour or larger loaf for 1 hour 20 minutes. Remove from oven and let sit for 5 to 10 minutes before serving. Serves 4.
