TJ’s Multigrain Blueberry Coffeecake
We love Trader Joe’s in this house! This morning we used the multigrain pancake mix to make some healthy and delicious coffee cake. Be warned: this is NOT a sweet buttery coffeecake so don’t expect it to taste like Entenmann’s. The good news is: this does not stop anyone in my house from devouring it.
Prep Time: 10 mins Cooking Time: 25 to 40 mins
Ingredients:
2 1/2 cups TJ’s multigrain pancake mix
3 tablespoons vegetable oil
1 teaspoons cinnamon
1 egg
1/2 cup sugar
1 cup buttermilk
1 1/2 to 2 cups fresh blueberries
2 tablespoon sugar mixed with 1 teaspoon cinnamon
Preheat oven to 350 degrees. In a large bowl whisk together egg, buttermilk and oil. Add TJ’s mix and sugar. Stir until just blended. Fold in blueberries. Transfer mixture into greased mini loaf pans or a greased 9 inch baking dish. Sprinkle top with cinnamon sugar mixture. Bake for 25 to 40 minutes depending on pan. Coffeecake is done when top is golden brown and toothpick comes out clean.
- Pour it on with buttermilk.
- Adding the baking mix.
- Just goofing around.
- Time for blueberries.
- Breakfast is served!

This looks great! I wonder if I could use any type of multigrain pancake mix? Sadly there isn't a Trader Joe's in the state!

Yes, frozen blueberries will work but you should let them defrost before adding them to the mixture. Just set them out on the counter. They defrost very quickly.
