Snack Time: Quinoa Cruch Parfait

We’re crazy for quinoa in this house. We also love a good yogurt parfait. So when we found this awesome Quinoa Crunch Recipe [1] we were ready to give it a go! The result was a crunch-tastic snack that I will be having for breakfast, lunch and dinner… and everything in between.

It’s starts with dry quinoa. You can use red or white.  Then you add a little canola oil and agave.

Then you spread it out on a Silpat (or just a non-stick cookie sheet) and bake it until it’s crunchy. It’s perfectly sweet and adds just the right amount of texture to a bowl of fruit and yogurt. Now for the recipe…

Quinoa Crunch Parfait

Prep Time: 10 mins  Cooking Time: 10 mins

Ingridients:
1 cup quinoa
1 tablespoon canola oil
1 tablespoon agave nectar
1 cup Greek yogurt
1/2 peach (sliced)

Preheat the oven to 375 degrees. In a small bowl mix 1 cup of quinoa, mix with agave and oil. Stir well and then spread in a layer on top of a Silpat on a baking sheet. Bake for 10 minutes or until crunchy. Meanwhile, scoop yogurt into a bowl and arrange cut fruit on top. Once the quinoa has cooled, sprinkle it on top of the fruit. Store leftover quinoa crunch in an airtight container.
