Savory Breakfast Bread Pudding
Talk about a crowd pleaser! Our friends Gary and Christy came over with their new baby Johnny on Sunday morning. It was their first time visiting our home so Gus and I decided to make something new and different. We looked at several different recipes but decided to make up our own… risky for company but we’re getting good at this. This turned out to be the most perfect brunch casserole. The best part about the recipe is that you prepare it the night before and just pop it in the oven in the morning. Gary and Christy each had three helpings and my kid has asked for it for every meal since.
Prep Time: 30 mins Cooking Time: 40 to 50 mins
Ingredients:
1 tablespoon olive oil
5 eggs
3 egg whites
1 large loaf of ciabatta bread (cut into cubes)
6 veggie or turkey sausage patties
1/3 cup chopped onion
1 1/2 cups lowfat milk
1 1/2 cheddar or mexican blend cheese
Preheat oven to 400 degrees. Place cubes of bread on a baking sheet and bake for 8 to 10 minutes or until toasted. Meanwhile saute onion in olive oil in a frying pan over medium heat until they become translucent. Add sausage to pan and crumble with rubber spatula while it cooks. Cook until browned. In a large bowl crack 3 eggs and 3 egg whites. Add cheese and 1 1/4 cup of milk. Whisk together to combine. Add toasted bread cubes and stir together to coat. Add sausage and stir to combine. Transfer mixture to a greased 9×13 baking pan. Whisk together remaining 2 eggs and 1/4 cup of milk. Pour egg and milk over entire mixture and cover. Refrigerate over night.
To cook, preheat oven to 350 degrees. Uncover casserole and bake for 40 to 50 minutes until fluffy and browning on top.

Yep! That's exactly what we used. But you can use any kind of sausage patty.
