Roasted Broccolini
My kid is a broccoli fan but had never tried broccolini (baby broccoli) before. So, we bought some and roasted them this weekend. Interestingly, he liked the stems but not the tops – just the opposite of how he feels about regular broccoli. Either way he’s eating his greens!
Ingredients:
15 to 20 stems of broccolini (washed + trimmed)
1 tablespoon olive oil
salt + pepper
2 tablespoons grated parmesan
Preheat oven to 400 degrees. Spread broccolini on a cookie sheet and toss with olive oil and salt and pepper to taste. Roast in the oven for approximately 20 minutes or until brown and tender. Let rest for 5 minutes and sprinkle with grated parmesan. Serve warm or at room temp. Serves 4.
