Rainbow Broccoli Parmesan

O.M.G. How have I not noticed these beautiful kid-tastic veggies before today? Discovering this broccoli cauliflower mix in the produce section of Trader Joe’s was like a dream come true. My kid immediately started referring to it as “Rainbow Broccoli” and he simply could not wait to make it for dinner.

The medley contains traditional green broccoli and white cauliflower but mixes things up by including orange, purple and light green varieties. The mix comes in a ready-to-steam package. While that sounds very convenient, we wanted to do something a bit more interesting with it.  After making it, we decided to toss our Rainbow Broccoli Parmesan with whole wheat pasta and made an entire meal out of it. Rainbow Broccoli Parmesan Recipe

Prep Time: 5 mins  Cooking Time: 8 mins

Ingredients:
1 package colorful broccoli / cauliflower mix (about 3 cups white, green, purple and orange florets)
1 garlic clove (crushed)
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon basil (chopped very finely)
2 tablespoons finely grated Parmesan + some for sprinkling
sea salt & freshly ground pepper

Blanch florets and set aside. Heat olive oil and butter in a large non-stick skillet over medium heat. Add garlic and saute for 2 minutes. Add broccoli and continue to saute for 5 minutes. Add basil, 2 tablespoons of Parmesan and salt and pepper to taste. Remove from heat. place in a serving bowl and sprinkle Parmesan on top of florets before serving. (Alternatively, add 3 to 4 cups cooked pasta to skillet and saute with florets for a few moments before transferring to a serving dish and garnishing with Parmesan.)

    YUM! My little ladies love broccoli.. purple broc would put them into a tizzy of excitement. i'll have to look for that at the store!

    So pretty! And your little touch of basil sounds like it would compliment the broccoli so well. I'm going to add that the next time that I saute up some broccoli!
