Quick Cucumber Tomato Salad
This quick cucumber tomato salad recipe is great when prepared 30 minutes before your meal and just gets better and better as it marinates. It’s the perfect recipe for a picnic because it tastes best at room temp. It’s sweet enough that your kid might even try it!
Prep Time: 8 mins Marinating Time: 30 mins to 4 hours
Ingredients:
4 vine ripened tomatoes (cored and cut into wedges)
4 persian cucumbers (cut into thin rounds)
1/2 medium red onion (cut in half + sliced very thin)
20 fresh parsley sprigs (chopped)
1/2 cup olive oil
1/4 cup red wine vinegar
1 tablespoon sugar
salt and fresh ground pepper
Place tomatoes, cucumbers and onions in a bowl. Toss together with a pinch of salt and set aside. In a small bowl combine olive oil, vinegar, sugar and salt and pepper to taste. Whisk well. Pour over veggies and toss. Throw in parsley and toss again. Let marinate at room temp for 30 mins or up to 4 hours (any longer should be refrigerated). Serves 4.
