Quick Chicken Soup

Quick Chicken SoupI have been feeling severely under the weather for the last several days and all I’ve really wanted to eat is soup. I’ve had every take-out variety available (my husband does not cook) including some super spicy pho. Last night I decided to ask my kid if he’d assist in whipping up a batch of chicken soup to help me nurse this cold. He was happy to help. Would you believe I enjoyed a steaming hot bowl of it for breakfast?

Prep Time: 15 mins  Cooking Time: 15 mins

Ingredients:
5 cups of water
5 packets of instant broth (veggie or chicken)
1/2 pound boneless chicken (cut into small chunks)
3 carrots (peeled and chopped)
1/3 cup frozen peas
1 tablespoon olive oil
1 large handful of bowtie pasta

Place olive oil, chicken and carrots in a medium pot. Pour in water and cook on high. When the water begins to boil add broth packets and pasta. Turn down to medium high and cook until pasta is just done. Turn off heat and add frozen peas. Skim the top of the soup and serve hot. Serves 3 to 4.
