Prudent Baby Guest Post: Apple Fritters

As many of you already know… I have a thing for the Prudent Baby blog. I spend hours on end looking at the projects and dreaming of one day being able to sew like Jaime does. When Jaime, one of Prudent Baby’s proprietors, told me she cooked these with her kid, I asked if I could feature them on my site. She obliged. This is her very own Apple Fritter creation and her gorgeous daughter, Scarlet, making it along with her.

And here’s what Jaime had to say about this recipe: Every single morning during my last month of pregnancy I ate an apple fritter on my way to work…alone in the car…licking my fingers after each bite.  Yes, I got really fat. Anyway, these homemade fritters might give you a heart attack but the recipe is easy, quick, and your kids will be like “Mommy made donuts!  We love mommy!!!” If you don’t want to deep fry you can check out Jaime’s Apple Cream Cheese Muffins instead.  Now for the recipe…

Apple Fritter Recipe

Prep Time: 10 mins  Cooking Time: 5 mins

Ingredients:
1 Cup Flour
1/2 Cup Sugar
1 teaspoon salt
2 teaspoon baking powder
1 teaspoon apple pie spice (or cinnamon/nutmeg combo)
1/4 cup apple sauce
1/4 cup milk
1 apple, diced
1 egg

Glaze:
2 cups powdered sugar
2 tablespoons milk

Combine all the dry ingredients.  Stir in apple sauce, milk, and eggs.  Fold in chopped apple.  Heat oil in a pan on high.  Add dollops of dough to oil (b/w one and two tablespoons).  Cook about two minutes until browned, then flip and cook two minutes more on opposite side.  Remove donuts to a paper-towel covered plate to drain oil, then to a cooling rack.  Once cooled drizzle with glaze, let glaze set then turn over and drizzle opposite side.  Do not eat donuts hot, they will taste too much of oil.  Donuts are best served warm to cool.

    OH.MY.GOD. just made these, and they are AMAZING! I was a total stranger to frying pastries and this recipe was perfect! I doubled the cinnamon, added a pinch of clove and a pinch of allspice, as well as about 2 TB vanilla. Also didn’t have the patience for glaze so sifted powdered sugar worked just fine. Ohhhh sooooooo goooodddd….
