Perfect Popovers
This popover recipe, compliments of Ina Garten, is simply perfect. The popovers rise an incredible amount and release the most amazing steam when opened. My kid is crazy for the taste and thinks watching the steam escape is magical. He asked to open every single popover in the batch… he’d eat them all too if I let him!
Ingredients:
1 1/2 tablespoons unsalted butter, melted
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups lowfat milk, at room temperature
Preheat the oven to 425 degrees. Place 2 popover pans in the oven while preparing batter. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Remove the popover pans from the oven and generously grease with cooking spray. While the pans are still hot, fill them until they are just less than half full and bake for exactly 30 minutes. Do not peek or they may fall!
Picky eater tip: try telling your kid there’s a surprise inside and watch his face light up when the steam escapes.
