Passover Matzo Brie
This matzo brie recipe is so easy to make and disappears right off the plate especially when accompanied by quick homemade applesauce or drizzled with maple syrup. My kid likes the job of crushing up the matzo so much that we may be eating this pretty often even when it’s not Passover.
Prep Time: 10 mins Cooking Time: 10 mins
Ingredients:
4 pieces matzo
1 cup warm water
4 eggs beaten lightly
1 tablespoon lowfat milk
salt & pepper
Let your kid break the matzo into small pieces a large bowl. Cover with water and let sit for a minute, then squeeze out the water. Set aside. In a medium bowl, beat the eggs with milk and add some salt and pepper to taste. Add to matzo to egg. Mix well. Heat frying pan and grease liberally with cooking spray. Pour matzo mixture into the pan. Brown one side and turn over until eggs are cooked. Serve with homemade applesauce or maple syrup. Serves 3 to 4.
