Parmesan Baked Tomatoes
We had some work done on our house and were unable to access the kitchen for a few days. My kid was anxious to get back to cooking and I was anxious to see what the food in the fridge looked like. After surveying the situation, I noticed that the vine ripened tomatoes were looking a bit peakish – definitely time to use them up! This recipe is perfect for very ripe tomatoes and gave me yet another chance to attempt to turn my kid into a tomato fan. My kid wouldn’t touch these. He did, however, acquire a new skill – grating. (Yes, I did watch him like a hawk!)
Prep Time: 5 mins Cooking Time: 20 to 25 mins
Ingredients:
4 vine ripened tomatoes
fresh grated parmesan cheese
8 bunches of basil leaves
pepper
Preheat oven at 400 degrees. Cut tomatoes in half (horizontal). Place them face up and grate some fresh Parmesan atop each tomato. Transfer tomatoes to a lightly greased cookie sheet and bake in the oven for 20 to 25 minutes or until they are beginning to become brown and bubbly. Remove from oven and divide basil evenly among tomatoes. Garnish with fresh ground pepper and serve immediately. Serves 4.
