Oatmeal Craisin Cookies
I’ve just had #2 and I’m almost ready to get back into the kitchen! Juggling two kiddos will surely be a challenge, but Angele, my guest poster today, is balancing three adorable munchkins and makes it look so easy. Here’s what Angele had to say about her famous Oatmeal Craisin Cookie Recipe:
I’ve been making this with my girls all winter, now the top of our fav homemade cookie list. I prefer to make these with them because they’re a treat but also provide good nutrients. The craisins add an extra boost of vitamin c. The oatmeal provides a good source of fiber. The walnuts are one of the best plant-based sources of protein plus rich in omega-3s, fiber, antioxidants and other good stuff. Plus they are some of THE best tasting cookies. My girls think the whole thing is a treat. This recipe is adapted from THIS fabulous one at recipezaar.com.
Prep Time: 5-10 mins Cooking Time: 8-10 mins
Ingredients:
3/4 cup sugar
1/4 cup brown sugar, packed1/2 cup butter, softened
1 large egg (we use cage free, veg fed)
1/2 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup all-purpose flour
1 1/2 cups quick-cooking oats (not instant)
1/2 cup crushed up walnuts (let the kids do the crushing with the bottom of a cup or a rolling pin)
1 cup craisins
Preheat oven to 375 degrees. Have your kids help measure out all the ingredients. Combine sugar, brown sugar and butter and mix well. (I have my girls help measure and pour these into a bowl, then I transfer to the big electric mixer bowl and let the mixer do the work.) Have the adult do the egg honors and just add into mixer along with vanilla. Stop the mixer and have the kiddos add in the premeasured cinnamon, baking soda, salt and flour. Start the mixer back up and mix well. Take off of mixer and let the kids hand mix in the oatmeal, walnuts, and dried cranberries. Using a small melon baller, let the kids scoop out the cookie mix and put onto lined or unlined cookie sheet. Bake 8-10 minutes then pull out of oven and let cool for a few minutes before serving with a nice cold glass of milk.
