Nuts for Haricots Verts

I have only recently developed a taste for green beans.  My hunch is that I never had green beans that were cooked correctly until quite recently. It is extremely easy to over cook a green bean. They taste best when they are bright green and still have a bit of a crunch. I really wanted my kid to experience good green beans so I put together a recipe which included pine nuts to encourage him to try them. (He liked the pine nuts in the spinach pie recipe [1] so much that he was picking them out of my piece of pie!) To make this recipe super easy I purchased pre-washed and trimmed haricots verts and pre-toasted pine nuts.

Prep Time: 7 minutes  Cooking Time: 2 minutes

Ingredients:
1/2 pound haricots verts (washed + trimmed)
1/3 cup toasted pine nuts
1 to 2 tablespoons butter
salt & pepper

Bring a medium sized pot of water to a rapid boil. Cook haricots verts in boiling water for 2 minutes. DO NOT OVER COOK. Drain well and immediately transfer to a bowl. Stir in butter and pine nuts while haricots verts are still steamy hot. Toss well and garnish with salt and pepper and serve immediately.  Serves 4.

To my surprise, my kid only wanted to eat the green beans and had zero interest in the pine nuts. So out the door went my Jedi mind trick!
