Minted Fruit Smoothie
Our friends came over for brunch with their baby in one arm and a bag of fresh fruit from the farmers market in the other. They asked for a cutting board, a knife and a bowl when they arrived. I thought this was such a lovely way to go about making a truly FRESH fruit salad. In between cuddling our newbie and their own they chopped up fresh plums, cantaloupe, strawberries and peaches. Then they took a big bunch of mint and chopped that up too and tossed it in with the fruit salad. I never put mint in my fruit salad so I couldn’t wait to taste it…
Before I tell you more about the fruit salad, I must mention that we had our friend, Leslie, visiting from NYC on that same day. She’s a huge fan of the blog and also happens to be a pretty awesome chic.
Back to the fruit salad: it was so great that we decided to make it into a smoothie the next day. All we added was 1/2 a ripe banana, milk and ice. I wasn’t sure how the skins would do and I was even more doubtful about my kid liking the minty taste.
But it turned out to be his favorite smoothie ever. That’s saying a lot because we make a ton of smoothies.
Minted Fruit Smoothie Recipe
Ingredients:
1 1/2 cups mixed fruit salad (ours was cantaloupe, plums, strawberries, and peaches)
1/2 large banana
a few sprigs of chopped fresh mint (if you haven’t already used it in your fruit salad)
1 1/2 cups of milk
2 cups of ice
Blend everything but the ice together. Add the ice and continue to blend until smooth. Makes approximately 4 servings.
