Pureed Maple Sweet Potatoes
This very easy relatively healthy side dish is so decadent it almost tastes like dessert. Once the potatoes are steamed, making them into a puree is so simple. As an added bonus, they can be made in advance and easily heated in the microwave or oven.
Ingredients:
4 large sweet potatoes
1/2 cup lowfat milk
2 to 3 tablespoons maple syrup
Cut sweet potatoes into quarters. Do not peel. Add several inches of water to a large pot and place sweet potatoes in a steamer basket above the water. Cover and steam potatoes for 35 to 40 minutes or until soft. Meanwhile, pour milk and maple syrup into a blender and set aside. When potatoes are done and cool enough to handle, scrape out the insides directly into the blender and discard skins. (Be sure to leave room at top of blender for steam to escape.) Blend on high until smooth and creamy. Serves 4.
As you can see, this concoction looks just like vanilla yogurt and has the added benefit of being made in the blender which is always a hit in our house.
