Healthy Blueberry Waffles
We’re always looking for new and improved breakfast recipes. Since I had a little bit of buttermilk left in the house we decided to make a variation on Godmamma’s Healthy Waffles. The buttermilk adds some depth to the recipe which was nice for a change. Cooking waffles with kids is all about the batter since the waffle iron is way too hot. Adding things like blueberries or chocolate chips really makes my kid smile.
- Squeezing honey.
- Adding wet to dry.
- Mixing it up.
- Adding blueberries.
- Healthy Blueberry Waffles
These were perfect with a dusting of powdered sugar. Didn’t even need syrup… although I admit I did do a little dipping. My kid did not! Now for the recipe…
Healthy Blueberry Waffle Recipe
Prep Time: 12 mins Cooking Time: 5 mins (depending on waffle iron)
Ingredients:
1 cup whole wheat flour
3/4 cup all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 1/2 cup lowfat buttermilk
1/2 cup canola oil
1 tablespoon pure vanilla extract
3 to 4 tablespoons honey
1 to 2 cups blueberries
powdered sugar for dusting
Preheat waffle iron. Beat egg whites until stiff. In a separate bowl combine flours, baking powder and salt. In another bowl, combine milk, vanilla, oil and honey. Add flour mixture and milk mixture together and stir to combine. Gently fold in egg whites. Pour onto hot iron and cook until light brown. Makes 6 to 8 large waffles.

Fantastic recipe. I love that you incorporate whole wheat! This makes me want to finally go buy a waffle iron … do you have any recommendations?
Mmm, who doesn't love some delicious blueberry waffles?
I hope you don't mind a recommendation from a stranger but I got this waffle iron as a wedding gift six years ago. I'm not so much for cooking (which is why I love this blog – such great inspiration) but the one thing I can make well is waffles and it's because of this iron. It makes a light, fluffy waffle with just the right amount of crispiness. http://www.amazon.com/Waring-WMK300-Belgian-Brush…
Oooh. I just made waffles today. Blueberries are SO expensive in Malaysia though so it's not really worth buying for waffles. Sad. I love the way yours turned out though.
