Health Nut Banana Bread

We love banana bread in this house, but it’s not exactly healthy. I’m all for “healthy” but I refuse to sacrifice taste.  This morning we decided to do a bit of experimenting to see if we could make a banana bread that is both delicious and nutritious.  I think we found a winner!

Prep Time: 20 minutes  Baking Time: 50 mins to 1 hour

Ingredients:
2 large eggs
2 ripe bananas (mashed)
1/4 cup unsweetened applesauce
1 cup whole wheat flour
3/4 cup all purpose flour
3/4 cup sugar
1/3 cup lowfat buttermilk
1 teaspoon vanilla extract
1 tablespoon vegetable oil
1 cup chopped pecans
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 325 degrees. In a small bowl, mash bananas and applesauce together. Set aside. Pour 1/2 cup chopped pecans into a small plastic bag. Smash nuts with the end of a rolling pin until pieces are very small.  Set aside. In a medium bowl beat eggs and sugar using an electric mixture until well combined – 4 or 5 minutes. Mix in mashed bananas and apple sauce.  Add buttermilk, oil and vanilla. Sift both flour, baking powder, baking soda and salt together and add to mixture; beat until just blended. Pour in nuts and combine. Do not over stir. Transfer batter to a greased and floured loaf pan.

Bake for 50 minutes to 1 hour or until toothpick comes out clean.  Turn over immediately to cool slightly. Serve while warm.

Some new things we learned with this recipe: sifting, nut smashing and cleaning up. The highlight of this recipe (besides eating the finished product) was smashing the nuts. My kid couldn’t get over the fact that he was allowed to bash them with a rolling pin. Perfect recipe for a boy!
