Grilled Lemon Basil Steak Skewers

A few months ago my friend, Susan, suggested we try a new burger joint in town called 8 oz Burger Bar. I agreed and I wound up having my first Estancia beef experience there.  Estancia beef comes from grass fed cows who are treated right and the beef has half the fat and cholesterol of grain fed cows. The burger was truly amazing and I immediately told my beef loving business partners all about it. They are both foodies and instantly ordered up some ribeye steaks for all of us to try. My kid and I decided to grill ours up this weekend.

The skewers themselves were a big attraction for my kid, although I did have to supervise very closely since they are quite sharp on the end. I wound up holding the meat while he poked through it. It was a great system and we had all six made up in no time. Now for the recipe…

Grilled Steak Skewers Recipe

Prep Time: 10 mins  Cooking Time: 5 to 8 mins

Ingredients:
1 12 oz ribeyes (we used Estancia Beef)
1/4 cup olive oil
2 garlic cloves (crushed)
2 teaspoons chopped basil
1 teaspoon oregano
juice of 1 large lemon
sea salt & cracked pepper
6 bamboo skewers

Soak skewers in water for 1 hour. Cut steak into one inch cubes and place in a large ziplock bag. Place bamboo skewers in water to soak. Meanwhile make lemon basil marinade by whisking together olive oil and lemon juice to emulsify. Then add garlic, basil, oregano and salt and pepper to taste. Pour marinade over steak cubes and let sit in the fridge for at least 3 hours. When you are ready to cook, preheat the grill on medium heat and take the meat out of the fridge. Skewer 5 cubes per stick. Pour remaining marinade over all skewers. When the grill is hot, cook the skewers for 5 to 8 minutes total making sure to rotate the skewers while cooking. When cooked to desired doneness, remove skewers from grill and let sit for 5 minutes before serving. Can be served on the skewer or transferred to a serving dish.
