Grandma Hope’s Baked Blintz
Several years ago, on the occasion of my Grandma Hope’s 80th birthday, my Aunt BJ put together a cookbook called Recipes for Celebrating Hope. It was filled with our family’s favorite recipes and it was a loving tribute to the matriarch of our family. I find myself turning to this cookbook whenever I want comfort food. A friend’s father died recently, so today I decided that my kid, nephew and I would make something from the cookbook to bring them comfort as well. We chose this Baked Blintz Recipe because it has so much richness and love baked right in.

Farmer cheese kind of looks like a cross between ricotta and goat cheese. My kid got a bit on his hands and was eager to taste it. I encouraged it and he was in heaven. I had to physically restrain him from continually dipping his finger into the filling once the egg was in there. Too bad the baked blintz was being made for another family so he didn’t get to sample the finished product. Now for the recipe…
Grandma Hope’s Baked Blintz Recipe
Prep Time: 15 Cooking Time: 40 to 45 mins
Dough Ingredients:
2 sticks butter (melted and cooled slightly)
2 eggs
3 teaspoons baking powder
1/4 cup lowfat milk
1/2 cup sugar
1 cup flour
pinch of salt
1 teaspoon vanilla
Filling Ingredients:
1 pound farmer cheese
1/2 cup sugar
2 eggs
juice of 1/2 lemon
pinch of salt
Preheat the oven to 350 degrees. In a large bowl mix together all dough ingredients. Set aside. In a smaller bowl, combine filling ingredients. Grease a square baking dish with cooking spray and pour 1/2 the dough into the bottom of the dish. Carefully spread the cheese filling on top of dough. This part is best when done by hand. Cover the cheese filling with the remaining dough to seal the top. Bake for 40 to 45 minutes or until golden brown. Serves 4.
Note: To make this for a crowd, make 1.5 times the amount of dough and double the filling and use a 9×13 baking dish.
