Easy Cinnamon Buns
I had to practically beg my kid to make these this morning… he was stuck on the idea of making baked oatmeal or muffins but after one bite he said “I could eat a MILLION of these.” These lovely little rolls taste like a biscuit covered in cinnamon and sugar. They cook in 10 minutes and are the perfect complement to a cup of tea.
Prep Time: 15 mins Cooking Time: 10 mins
Dough Ingredients:
1 cup whole wheat flour
1 cup white flour
3 teaspoons baking powder
2 tablespoons sugar
1/2 teaspoon salt
3/4 cup of milk
1/4 cup of melted butter
1/4 cup canola oil
extra flour for dusting
Filling Ingredients:
2 tablespoons oil
3 tablespoons sugar
3 tablespoons brown sugar
lots of cinnamon for sprinkling
Glaze Ingredients:
1/2 cup powdered sugar
2 to 3 tablespoons milk
Preheat oven to 400 degrees. In a large bowl sift together all the dry dough ingredients. Stir in milk, butter and oil until dough becomes thick. Gather into a ball and place on a floured work surface. Flour a rolling pin and roll out dough into large rectangle. In a small bowl, mix together the sugar and brown sugar for the filling. Using a pastry brush, paint the oil on top of the dough. Sprinkle most of the sugar mixture on top of the oil leaving a table spoon or two for topping the cinnamon roll. Generously sprinkle cinnamon over the entire filling. Roll dough up and cut into sections with a very sharp knife. Place on a greased cookie sheet (I used a Silpat instead). Sprinkle remaining sugar mixture on top of cinnamon rolls and bake in the oven for 8 to 12 minutes. They should be slightly brown on top. Meanwhile, make the glaze by slowly whisking milk into sugar until it is a nice smooth consistency. When rolls are done remove from oven and drizzle glaze on top of each roll. Serve warm. Makes about a dozen cinnamon rolls.
