Easy Breakfast Polenta
We spent yesterday afternoon at the home of our friends Matt and Tamara. For my kid, the highlight of the visit was picking ripe lemons directly off their tree. We came home with three unbelievably fragrant lemons and decided to make something with them this morning. This recipe is extremely easy with only a few ingredients.
Ingredients:
1 package premade polenta
2 large ripe but firm anjou pears (peeled and cut into pieces)
juice from 1/2 large lemon
2 tablespoons butter
1/4 cup water
1/2 teaspoon corn starch
2 tablespoons real maple syrup
1 teaspoon cinnamon
Preheat oven at 350 degrees. Slice polenta into 1/4 inch rounds and place on well greased cookie sheet. Spray the top of the rounds as well and place in the oven. Set timer for 20 minutes. Meanwhile, dissolve cornstarch in water and set aside. Toss pear slices with lemon juice. Melt butter on medium in a non-stick pan and add pears. Cook for 2 minutes and add cinnamon. Pour water (with cornstarch) into pear mixture and add maple syrup. Continue to stir as the mixture starts to bubble. Let bubble up (while stirring) for a few minutes until sauce is thickened and pears are beginning to soften. Be careful not to over cook the pears! When timer is done remove polenta slices from the oven and divide evenly on four plates. Spoon pear mixture over polenta and add extra sauce to each plate. Serve immediately. Serves 4.
Kid accomplishments: learning where food comes from (Matt & Tamara’s back yard!), refining of knife skills, first time use of the lemon squeezing tool and most importantly trying polenta for the first time!
