Dill & Cheddar Popovers

Since we finally found the Perfect Popover Recipe [1] my kid wants to make them all the time. This would be totally fine if we weren’t on a mission to make 365 different recipes! To mix things up, we decided to create a Dill & Cheddar version of  the Perfect Popover Recipe. It makes for a more savory popover but it’s just as good.

Dill & Cheddar Popovers

Prep Time: 8 mins  Cooking Time: 30 mins

Ingredients:
1 1/2 tablespoons unsalted butter, melted
1 1/2 cups flour
3/4 teaspoon kosher salt
3 extra-large eggs, at room temperature
1 1/2 cups lowfat milk, at room temperature
1 tablespoon fresh dill (chopped finely)
3/4 to 1 cup cheddar cheese

Preheat the oven to 425 degrees. Place 2 popover pans in the oven while preparing batter. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. Stir in dill. The batter will be thin. Remove the popover pans from the oven and generously grease with cooking spray. While the pans are still hot, fill them until they are just less than half full and sprinkle cheese evenly among popovers.  bake for exactly 30 minutes. Do not peek or they may fall!  Makes 10 to 12 popovers.

Picky eater tip: try telling your kid there’s a surprise inside and watch his face light up when the steam escapes.
