We haven’t been neglecting the cooking, just the blog!  Get ready for a whole host of new recipes in the next 24 hours. This is a quick fix side salad that my husband and I love to eat when it’s late and we want something light. My kid loved making it, but had zero interest in trying it.

Prep Time: 8 mins

Ingredients:
4 Persian cucumbers
1 vine ripened tomato
1 ripe avocado
juice of 1 lemon
3 to 4 tablespoons olive oil
1 teaspoon dijon mustard
salt & pepper

Dice cucumbers, tomatoes and avocado.  Set aside. In a small bowl whisk together lemon, olive oil, mustard and a dash of salt and pepper to taste. Pour dressing over veggies and toss to coat. Serves 2.
