Crustless Quiche in a Cup
I have found another way to combat pickiness. It’s all about size. Ok, I admit I didn’t discover this. There are lots of food products packaged and sold in kid friendly sizes, I just never thought to apply it to a recipe. When I suggested we make Broccoli Quiche, my kid had no interested. When I suggested we make it in a cup he was beyond thrilled. We used coffee mugs, but it could have been done with ramekins as well. He even picked out which cup would be his and kept a close eye on that particular quiche. So now we have a new Crustless Quiche in a Cup recipe!
The best part about this breakfast is that it is chock full of veggies. My kid ate the entire quiche cup in one sitting. (My husband didn’t even finish his!) Beware that the cups can get very hot in the oven so it’s best to remove the quiche from the cup before giving it to your kid. The good news is that it slides right out. Now for the recipe…
Crustless Quiche in a Cup Recipe
Prep Time: 10 mins Cooking Time: 30 to 40 mins
4 egg whites
1/2 cup lowfat milk
1/2 cup shredded part skim mozzarella cheese
1/2 cup shredded cheddar cheese
2 cups fresh broccoli florets
fresh pepper & sea salt
Preheat oven to 350 degrees. Blanch the broccoli in boiling water, dry and chop up into small pieces and set aside. Also set aside 2 to 3 tablespoons of cheddar cheese for sprinkling on top of quiche. Meanwhile, in a large bowl combine eggs and whites and lightly whisk together. Add milk and continue to whisk together. Stir in all remaining cheese and broccoli and finish off with salt and pepper to taste. Spray cups or ramekins with cooking spray and place on a baking sheet. Divide egg mixture evenly among cups, sprinkle with cheddar cheese and bake for 30 to 40 minutes or until beginning to brown. An 8oz ramekin should yield 4 quiches. Note: Coffee cups are generally a bit bigger/deeper than 8oz. If you are using mugs and you want to get the quiches to pop out like the picture (above) it’s best to divide the recipe among 3 cups instead of 4.
Well that's just adorable and a great way to talk kids, and truth be told, probably a lot of adults into creatively eating and enjoying their vegetables!
Bet it would be even better with spinach!! YUM!

How many servings does this make? (How many ramekins should I get out?)
A slice of quiche (with crust) ranges from 350 to 500 calories so even in 3 mugs this is a much healthier alternative for your kiddos.

Each one of my muffin cups holds approx. 70 calories and 6 g of protein.
The 4 ramekins would be 200 calories each w/ 18g of protein.
3 mugs would be 270 calories and 24g protein

is it 4 eggs + egg whites from 4 OTHER eggs? If it is, what do you do with the extra yolk? (besides throw them away…)
Yes, the recipe is 4 eggs + 4 egg whites. I use liquid egg whites that I buy at Trader Joe's and keep in the house but you can also use just the whites of 4 eggs and either throw away the yokes or save them for a different recipe. By the way, this recipe will work just fine with 8 whole eggs if you don't want to throw anything away! Cutting down on the number of yolks cuts down on calories.
I made these in my silicone muffin cups, and it made 12.
I ♥ your blog! I love to cook with my kids, too. Cooking is a great skill to learn, plus kids eat more healthy foods if they help make them. So glad I found you via Craftzine! I'm sure we will try lots of your recipes.
Great idea and would work so well for grown ups too! I imagine a patch of these on a brunch buffet that would look and taste great. You are so right about the size thing and I've found that kids love anything on sticks too don't you?
This is wonderful! This is an amateurish question, but do I have anything to worry about when choosing which coffee cup to put in the oven, are they all generally oven safe ?
What a cute presentation! If you want to still serve in a cup (since children would love the fun of that), just pop it out of the hot mug and place into a different, but same sized mug).
Cute – I think I'll try either a coffee cup of a cupcake version (as I just got a new cupcake pan).

The crust is the best part of Quiche.
A quiche without a crust sounds supiciously like an omlette to me.
BTW these cook in the microwave very quickly but you don't get that thicker layer on the top (which I rather like).
One other trick is to put a piece of toast in the bottom of the cup, it gives it a hearty texture near the bottom.
I will def try this. My daughter is a bit picky in the mornings. This looks like a great way to sneak in a serving of veg early in the day

It's not an amateurish question! I find that microwave safe ceramic mugs do fine in the oven as long as they have no cracks. No china and no plastic (obviously).

I was just listening to Dr. Radio on XM today that researchers are now thinking that as many as 50 – 70% of the population could have an intolerance to gluten so, this is PERFECT in more ways than one! I know many people who have an intolerance to gluten and the no-crust is brilliant.

Just made this in Jerusalem for a Rosh HaShana treat! Big hit! I added a garlic clove, some diced onion, and oregano. I used a basic Israeli cheese called "Gush Halav" because I didn't have any cheddar and the stores are closed for the Chag (Holy day). Next time I might add some mushrooms!

You can pop one cup into the microwave for around 90 seconds, and have instant quiche. I make “scrambled” eggs for one in the microwave all the time. No pan to wash!

I make these one at a time in the microwave. Spray mug with pam, 2 eggs per mug, leftover veggies from last night (&/or fresh spinach, or heat up frozen veg in microwave 1st), pepper (no salt!), other seasoning (onion/garlic powder, basil?, etc) any shredded cheese, splash of milk, microwave 30 seconds & stir, then another 30-40 seconds. I usually mix eggs & milk in the mug, dump in veg & cheese, microwave, stir, microwave, eat. FAST & YUM.
