Cinnamon French Toast & Fruit Salad

Truthfully, I usually only have my kid do the mixing and pouring, but since this blog is about teaching him to cook, I decided to let the kid experiment!   Upon his request, he was allowed to crack the eggs himself – surprisingly he is better at it than I am. No shells to fish out!  He also got to test out his cutting skills for the very first time.  We started with a banana using a very dull child sized butter knife.  He’s addicted already.  No blood yet…

The great thing about making this Cinnamon French Toast is that Trader Joe’s does most of the work for you. They have thick cut Cinnamon Swirl Bread that comes with and without raisins.

French Toast

Prep Time: 10 mins  Cooking Time: 30 mins

Ingredients:
4 eggs
2/3 cup 2% milk
4 pieces thick cut cinnamon swirl bread available at Trader Joes (my fave store)

Preheat oven to 250 degrees.  Pour milk and eggs into 9×13 baking dish.  Whisk together. Place all 4 slices into pan until egg is fully soaked in.  (About 5 mins, this is a great time to start prepping fruit salad ingredients.)  Flip slices to soak the other side (another 5 minutes). Heat a frying pan or skillet to medium-low heat and spray with cooking spray.  Gently place bread on skillet and cook on both sides until golden brown.  Remove bread from skillet and place on cookie sheet in the oven for approx 15 minutes or until center of bread is firm. Meanwhile begin preparing fruit salad.  Serves 2 to 3.

Fruit Salad

Prep Time: 10 mins

Ingredients
1 pear
1 cup strawberries (washed + patted dry)
1/2 cup blueberries (washed + patted dry)
1 banana
1 clementine (peeled + separated)

Cut pear, strawberries and bananas and place in large bowl.  Add blueberries and clementine slices. Serves 2 to 3.

I must admit that the greatest thing about making this meal was that I got my kid to try something new without even asking him.  It wasn’t even the French Toast or the Fruit Salad… it was the veggie sausage!  (Morning Star Farms brand.)  He was fascinated by the idea of flipping it on the skillet and he wanted to try one when we sat down to eat.  Score!
