Chinese Chicken Salad Sandwich

I’m a sucker for Chinese chicken salad so the idea to make a sandwich using the same flavors was really a no-brainer for me. Plus, the main ingredient is peanut butter – which is is generally pretty kid friendly.

The dressing has apple cider vinegar in it. When we started to measure it in, my kid asked if it was apple juice. No, I replied. Can I try it? He asked. I attempted to explain that he wouldn’t like it but then I decided to let him give it a whirl. I think that was a mistake because he would not touch the dressing after trying that vinegar. Ooops!

He remained a dutiful helper none-the-less and we had some beautiful sandwiches to show for it. We even made one with tofu for my husband! Now for the recipe…

Chinese Chicken Salad Sandwich Recipe

Prep Time: 15 mins

Ingredients:
1 rotisserie chicken
1/4 cup vegetable oil
2 tablespoons cup good apple cider vinegar
1 1/2 tablespoons soy sauce
1 3/4 teaspoons dark sesame oil
1 1/2 teaspoons honey
1/4 teaspoon peeled, grated fresh ginger
2 tablespoons smooth peanut butter
toasted sesame seeds for sprinkling
salt & fresh cracked pepper
1 large loaf crusty french bread
1 cup red cabbage (shredded)

Shred the chicken and set aside in a large bowl. Prepare the dressing by whisking together oils, vinegar, soy sauce, honey, garlic, ginger and peanut butter until smooth. Add salt and pepper to taste. Pour half the dressing into the chicken and toss. Taste it and continue to add more dressing until it tastes well coated. (Total amount depends on just how big your chicken was.)  Sprinkle with toasted sesame seeds. Slice open the french bread but do not cut all the way through. Spoon chicken into bread. Cut the bread into smaller sandwiches and then garnish each sandwich with cabbage. Makes about 6 servings.

    I love me a good Chinese chicken salad. Never thought to put it between slices of bread even though I do that all the time with American-style chicken salad. A primo idea!

    Oooh, love these sandwiches! Looks like a great set of flavors, very yummy! I could also see wrapping it up in lettuce leaves.

    This recipe is just what I’ve been craving! Quick question though, in the dressing you mentioned whisking the ingredients but just how much garlic &what kind do you prefer?

    Its such as you learn my mind! You seem to understand a lot approximately this, such as you wrote the ebook in it or something. I believe that you could do with a few p.c. to power the message home a bit, but other than that, this is great blog. An excellent read. I’ll certainly be back.
