First, my apologies. With all the holiday craziness, I’ve gotten a wee bit behind on the posting, but the good news is that we’ve been cooking the entire time. We’ve got some great stuff to share with you including this super yum alternative to regular roasted potatoes. It’s crazy easy.

Chili Seasoned Potatoes

You just peel and chop some russet potatoes and make up a Mexican style dressing, shake it up in a jar (my kid’s fave) and then bake it in the oven. Just before serving, give it a squirt of lime. It’s a great Mexican roasted potato recipe.

Serve it as a side with Crock Pot Fajitas, or better yet let your vegetarian friends fill their fajitas with these potatoes instead. Now for the recipe…

Chili Seasoned Potatoes
adapted from this Nourishing Gourmet Recipe

Prep Time: 10 mins  Cooking Time: 40 mins

Ingredients:
6 medium russet potatoes, peeled and dice
1/3 cup of olive oil
2 teaspoons dried oregano
2 teaspoons Mexican chili powder
1/2 teaspoon kosher salt
freshly ground black pepper
1 lime

Preheat the oven to 400 degrees. Combine olive oil, oregano, chili, salt and pepper to taste in a jar. Shake well. Spread out potatoes on a rimmed cookie sheet and pour dressing over them. Make sure all potatoes are well coated. Roast for 40 minutes or until potatoes are crisp on the out side and soft on the inside. Squeeze lime juice over potatoes while they are still warm. The lime is a KEY INGREDIENT to making these taste great. Don’t skip it! Serves 4.

    @ctb, you can really use any amount of potatoes and adjust the seasonings. just make sure they are well coated with the dressing so they taste good. the lime is KEY. don't skip it!

    I know the frustration of being the Mother of a picky eater! Sometimes every bite of food requires major negotiating skills. It’s exhausting. I have now discovered a great cookbook on Kindle – Kid Approved Slow Cooker Meals – by Kelly Cook. My kids love the dinners and there’s 50 of them. Hooray! No food arguments for almost 2 months.
