Broccoli & Cheddar Quesadillas

The left over broccoli in the fridge had to be put to good use this evening so we decided to put together a new kind of quesadilla. Pre-cooked broccoli worked really well especially since we chopped it very small. We used corn tortillas, but it would work just as well with flour. Best part is that it was ready in a flash!

Prep Time: 5 mins  Cooking Time: 12 mins

Ingredients:
2 corn or flour tortillas
1/4 cup chopped broccoli (cooked)
1/3 cup cheddar cheese

Coat a non-stick frying pan with cooking spray. Place one tortilla in the pan and cook over medium heat until warm. Turn over and sprinkle half the cheese on top of tortilla. As cheese begins to melt, sprinkle broccoli on top and then another layer of cheese. Place the other tortilla directly on top of cheese. Use a smaller pan or plate to weigh down the top tortilla so that cheeses melt together and bottom is begins to get crisp. Once cheese is melted, flip the tortilla and cook on the other side  until crisp. Transfer to a paper towel to absorb any excess oil. Cut into triangles and serve warm.
