Breakfast Sausage Frittata

Even though we used veggie sausage, this breakfast frittata is so deliciously decadent that my kid was literally licking his fingers after digging in.  It’s so easy to assemble and is a great way to make eggs when you’ve got company coming over.

We made this veggie friendly (veggie sausage patties) and also only used 3 whole eggs and 3 whites. We could have made it even healthier by cutting down on the amount of cheese. It still would have tasted great. I always experiment with this kind of breakfast by using regular sausage patties and/or whole eggs, changing up the amount and kind of cheese, etc. A frittata is very difficult to mess up. Breakfast Sausage Frittata Recipe

Prep Time: 5 mins  Cooking Time: 10 to 15 mins

Ingredients:
3 large eggs
3 egg whites
4 veggie sausage patties
2 tablespoons lowfat milk
1/4 cup cheddar cheese
1/4 cup mozzarella cheese
salt & pepper
1 teaspoon chives (chopped)

Preheat oven to broil setting.  Whisk together eggs and milk. Heat a non-stick, oven safe frying pan over medium heat. Add cooking spray to pan and cook veggie sausage until it is soft enough to crumble. Crumble with a rubber spatula. Pour egg mixture into pan covering all the veggie sausage crumbles. Cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle with cheeses and add salt and pepper to taste.  Place pan into oven and broil for 3 to 4 minutes, until lightly browned and fluffy. Add chives for garnish. Remove from pan and cut into slices. Serves 4.
