Breakfast Polenta
Breakfast can get really repetitive in our house, so we decided to mix things up this morning with a vegetarian friendly breakfast polenta. My kid wakes up very hungry so I tried to speed the process along with a little help of the microwave. *Gasp* It doesn’t taste microwaved. I promise.
Believe it or not using veggie sausage made this dish incredibly flavorful. My kid asked for some extra veggie sausage on the side. I obliged and we enjoyed a nice family breakfast veggie style. Now for the recipe…
Breakfast Polenta Recipe
Prep Time: 5 mins Cooking Time: 15 mins
Ingredients:
3/4 cup polenta
3 cups water
pinch of salt
1 tablespoon olive oil
1 clove garlic (crushed)
2 veggie sausage patties (such as Morning Star)
1 cups frozen spinach (mostly thawed)
salt & fresh pepper
In a large microwave safe bowl combine polenta, salt and water and microwave on high for 8 minutes. Meanwhile, heat oil in a non-stick skillet over medium heat. Add garlic and saute for a minute or two. Add veggie sausage patties and break up with the back of a spoon until crumbly. Add spinach and continue to saute. When polenta is done, give it a good stir and add it to the skillet. Stir to combine and sprinkle salt and pepper to taste. Serves 4.
