Breakfast Pizza

This morning’s breakfast adventure was so much fun!  We improvised with what was already in the kitchen and came up with this delicious breakfast treat that made everyone smile. We can’t wait to make lots of variations in the coming weeks. Here’s the recipe for a single breakfast pizza (serves 1) – just multiply this recipe by the number of people you are serving.

Prep Time: 10 mins  Cooking Time: 15 mins

Ingredients:
1 whole wheat pita
2 tablespoons good marinara or pasta sauce
2 eggs
1 tablespoon lowfat milk
1/3 to 1/2 cup shredded part skim mozzarella cheese
1 or 2 pieces bacon chopped into small pieces (use veggie, turkey or pork)

Preheat oven to 400 degrees. Crack eggs in a small bowl add milk and lightly beat together with fork. In a small frying pan, scramble eggs until just done – should still be pretty wet. (Do not overcook the eggs!) Set aside. Meanwhile, spread marinara all over the surface of a pita. Spread scrambled eggs on top of marinara and top with shredded cheese. Add bacon (we used veggie) and bake directly on the rack in the oven for 10 to 15 minutes or until cheese is melted and bubbly. Serve hot.

Note: it is very important to bake this directly on the rack in the oven, if you put it on a cookie sheet it will not be crisp enough on the bottom.

Breakfast Pizza

I highly recommend getting a silicone pastry brush so that your kid can “paint” the pizza with the sauce. That was the highlight of our cooking this morning.

Breakfast is served!

    Delicious! I added some flake crab meat instead of bacon, and light cheese whiz instead of marinara. The crust was perfect and the eggs turned out great. I just wish I’d had some bell peppers and onions on hand!
