Breakfast Cookies II

The fine folks at Oh Nuts! sent us some goodies including a bag of organic dried cranberries. My kid wanted to use them to make these Breakfast Cookies. I had been wanting to try to make a version of those cookies with less butter so it was the perfect time for a little baking experiment.

The experiment turned into a success story. My kid liked these better than the original version. We even brought a dozen to his sports camp so that they could all have some as a morning snack.  Now for the recipeā€¦

Breakfast Cookie Recipe

Prep Time: 15 mins  Cooking Time: 12 mins

Ingredients:
1 cup whole wheat pastry flour
1/2 cup all purpose flour
1/2 teaspoon baking soda
pinch of salt
1 teaspoon cinnamon
1/2 stick butter
2 1/2 cups applesauce
1/3 cup brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 cup oatmeal
1 cup dried cranberries

Preheat the oven to 400 degrees. In a medium bowl whisk together flours, baking soda and salt. Set aside. Cream butter and sugars in an electric mixer until fluffy. Mix in egg and vanilla. Add the flour mixture and mix until JUST blended. Do not over mix. Fold in the applesauce, oats and dried cranberries. Scoop out batter onto a greased cookie sheet (I highly recommend using a Silpat), flatten slightly and bake for 12 mins or until toothpick comes out clean. These come out tasting more like muffin tops than cookies. That’s what makes them great! Makes about 2 dozen.

    So, your post made me think about an article I once read about two girls who made and then sold their bread at the local farmers market. I think this would be a great thing to think about doing. The profits could go towards a college savings account.

    p.s. My 2 1/2 year old has been helping me in the kitchen since he could stand up against the counter. I'm excited to try these recipes! Thanks!!!

    We picked up some orange flavored dries cranberries at Trader Joe's the other day which I promised we'd use in oatmeal-chocolate chip cookies. mmmmm…

    made these this a.m. used white whole wheat instead of pastry and added golden raisins and coconut to the mix. My kid LOVED them and asked for more before he had finished his first one. Next time i might add in some raw or brown sugar at the end to get a bit of crunch on the outside. I think these will freeze so well! I will be freezing 1/2 of these and warming them up in the am as needed. Thx!

    oh, if only i had a half a stick of butter in the house, I would SO be making these tonight! Meanwhile, I'll bookmark this page and make them tomorrow!! Thanks for sharing and I LOVE how you used so much applesauce! I have a bunch of macadamia nuts that I might add to batch number 2; then I'll try some flax seed to see if anyone notices :-)

    I just made these with my 6yr old daughter. We love them! I ate four as soon as they cooled off. :)

    I added walnuts to some, and they were yummy. I also discovered a VERY cool trick for helping kids place drops of cookie dough on the cookie sheet. I've posted it on my blog, and linked back to you for the cookie recipe. Thanks for sharing!

    I am looking for recipes for easy and fun breakfasts….but have no desire to go buy whole wheat flour (or any idea where to even find that!) can this be made with normal stuff?
